Kiwi Tanghulu Straight From The Hunger Diaries’ Kitchen

Ingredients
4 kiwis
1 cup sugar
½ cup water
2 tbsp corn syrup

Instructions
- Peel the kiwis, then slice into 1/2”-3/4” thick rounds.
- Add one or two slices of kiwi onto wooden skewers so the skewer goes through both the green parts of the kiwi and the thick white center, then lay on a paper towel-lined sheet pan and pat dry. Place in a non-humid part of your fridge uncovered while you make your syrup. This will help the slices dry out a bit more. You can also put them in the freezer, just don’t forget about them! If they freeze, the texture of the kiwi will be mushier and will leach out more water.
- Make the syrup. To a small pot, add the sugar, water, and corn syrup and stir to combine. Then turn the heat on to medium and bring to a boil. At this point, DON’T STIR, JUST SWIRL! Using a spoon or something else to stir will cause the syrup to crystalize. Cook until the temperature reaches 150°C/302°F (the hard crack stage). You will need a candy (or meat) thermometer for this. Don’t walk away! It takes a few minutes for the temperature to rise, but once it gets to a certain point, it rises pretty quickly.
- Once it reaches temperature, remove from the heat and immediately dip one skewer of dry kiwi at a time into the sugar mixture to coat. Let the excess drip off, and spin or swirl to get the coating more even.
- Dunk into ice water for a couple seconds to harden instantly, then blot dry with a paper towel and place on a plate.
- Enjoy immediately!

Notes
● You want the kiwi as dry as possible before dipping in the sugar. If it’s moist, the sugar coating will slide off. Kiwi is a tricky fruit to candy like this because of the moisture. If you’d like, you can opt for something drier like whole grapes or strawberries instead!
● It’s important to eat these pretty quickly. The longer they sit, even if just for 5 minutes or so, the longer the kiwi will have to leach moisture into the sugar coating. This will make the coating stick to your teeth (which no one wants). You’ll have a bit more time to let them sit if you use whole grapes or strawberries instead.
● Choose a wood skewer that isn’t completely smooth so the fruit has something to grip.
