Ingredients And Tools

Brownie Ingredients:
- 11oz 72% dark chocolate, chopped
- 1 cup (2 sticks) unsalted butter
- 4 eggs, room temperature
- 2 egg yolks, room temperature
- 1 1/4 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 1/4 cup all-purpose flour
- 1/4 cup + 1 tablespoon Dutch processed cocoa powder
Decorations:
- 4 oz fondant
- icing sugar, for sprinkling
- 1/2 cup chocolate buttons or brown M&M’s
Tools:
- 9 x 13” baking pan
- medium saucepan
- large heatproof bowl
- whisk
- rubber spatula
- rolling pin
- chef’s knife
- paring knife
- ruler
- paint brush
Instructions
1. Fill the saucepan halfway with water and set it over medium heat. Line the baking pan with parchment paper and set aside.
2. Preheat the oven to 350°F.
3. Place the chocolate and butter into a large heatproof bowl. Place the bowl on top of the saucepan of simmering water, and stir occasionally until melted.
4. Remove the bowl from the heat and add the eggs, egg yolks, and vanilla. Whisk until incorporated.
5. Add the sugars and salt to the chocolate mixture. Whisk until combined.
6. Fold in the flour and cocoa powder, stir just until the dry ingredients disappear.
7. Pour the batter into the lined baking pan. Bake the brownies for 30 minutes, rotating the pan halfway at the 15-minute mark. Cool completely, then chill.

8. While the brownies are chilling, sprinkle the counter with icing sugar and roll the white fondant out with your rolling pin until it is nice and thin. If you have never worked with fondant before, you can roll it out in smaller sections and reroll the excess as you need it.
9. Carefully remove the brownies from the pan by running the paring knife along the sides and turning out.
10. Use a ruler and chef’s knife to cut the brownies into equal squares. First, trim away the edges to create an 8 x 12” rectangle. Then, cut into 24 squares that measure 2 x 2”.

- Cut the fondant into equal-sized squares. Flip the squares over so you have a flat surface to work with. Brush the surface of each brownie very lightly with water, or rum if that’s more your style! Place a fondant square on top of each brownie.

- Decorate the top of each brownie with chocolate buttons, ranging from 1 to 6 the faces of the dice. Gently press each button into the fondant to create the patterns. If you are using M&M’s, make sure the logo is face down.
